SUMMARY: Delicious... IF cooked longer than recommended. DETAILS: The modifications I made to this recipe are 1) I purchased Chorizo sausage raw, and browned prior to making the soup; 2) I substituted Cannelini beans for the Garbanzo beans because I happen to hate Garbanzo beans; 3) As another reviewer recommended, I simmered the soup for 30-40 minutes instead of the recommended 10 minutes. In my mind, the longer cook time will be mandatory if you want to get that "comfort food" feel from the soup. This will give you more flavor, and that thick tomato-white bean broth that we all know and love. Most importantly, simmering for longer will cook the potatoes until they are easy to break apart in your mouth. I tested the soup at 10 miinutes and - even though I'd cubed the potatoes quite small - found the potatoes to be "al dente" in a way that did not appeal to me. My entire family LOVED this recipe. Very tasty, I used diced kolrabi along with the potatoes and it turned out very well. In the future I'll spice it up a little more with a little more cayenne pepper. This soup is amazing! Easy to make and my husband and I love it. We did change a few things, made it a little healthier. This dish is my boyfriend's favorite, and we make it a few times each winter. My only suggested change is to cook the final soup for longer than the 5-10 minutes indicated, up to an extra hour. Also, if you can't find chourico, you can substitute something like Mexican chorizo (even Italian spicy sausage would work in a pinch, though have slightly different flavors). Too die for!!! I never review reciepts but I had to with this one. I followed the recipe except couldn't find dried chorizo so I used 1/2 lb or lose chorizo and 1/2 lbs of mild italian sausage. I combined them, fried them up and added them to soup at the end of the recipe. It was delicious and the right amount of heat... not too hot but still a little kick. I am so glad I read the reviews before making this dish. I found the mexican cherizo and decided it was too hot. I then made it with mild Italian sausage and it was still a bit spicy for our taste. My boyfriend requested this soup that his Portuguese grandmother used to make for his birthday dinner, but he didn't have the recipe. He told me the ingredients so I just Googled Portuguese soup recipes.This Rachel Ray recipe was the only one I found with chick peas and chourico (most had ham bone or kielbasa).He said it also had linguica it, so I just added it in with the chourico.I loved that this recipe took only 30 minutes vs. the two hours or more to slow cook that many other recipes called for. I don't have time for that on a weeknight as a working mom! I have never eaten this soup before so I had no idea what it tasted like, and I was worried that he would not like his birthday dinner, but he absolutely loved it! Absolutely delicious! I've always been scared of cooking kale, but this de-mystified this vegetable for me. I did half the sausage amount and switched the chorizo for mild italian chicken sausage (what I had on hand, and added a tsp of red pepper flakes at the same time I seasoned the soup. In the future, I am going to brown the chicken sausage first, take it out of the pot and set aside. Then continue with the onions (sans potato - it doesn't need it. Thanks to other readers, I used a large can of diced tomatoes. That, along with the chicken stock, there was plenty of liquid to make the soup. Not sure the size of the people that was expected when it was listed as serving 4. My biggest modification is to decrease the amount of sausage dramatically if I put it in the soup, or compromise and fry it up separately and serve it as a side you can sprinkle on, for the sake of marital bliss. The way my husband likes it, some sort of meat on bones belongs in the soup, so the cooking time the way he'd prefer it is often measured in hours, not minutes.My husband loves this kind of stuff, I'm not a huge fan of traditional kalt soup, as it takes hours and hours of slaving away in the kitchen, and he won't do it. I like the quicker, lighter version, although if I don't separate the sausage, it's too spicy for my lighter, Scandinavian palate, and sensitive GI tract.If you're a fan of light, simple flavours, you might want to look at other recipes. Portuguese soup has been a staple in my home since birth. Being Portuguese, I've tasted the best. I always like to try every chef's version of this dish. This recipe is very good, though I wouldn't call it Portuguese, not if you substitute the sausage, because it changes the nuance of the entire dish. Also, every community has its own adaptation of this soup, and I haven't had one that was ever bad, but I just can't give this 5 stars... no one could who's ever tasted the real deal ! Super easy to make and tasty! I ended up dumping in a lot of chicken broth--at least 1.5 quarts (or 6 cups to cover all the ingredients in the pot. I also... didn't use chourico, because I didn't know what that was. Instead, I had a pound of frozen bacon, so I cut up and fried that up in the pot before putting in the onions and potatoes (no oil was used. Still, it was delicious! First off...not nearly enough liquid. It called for a quart of stock and 2 quarts nearly did it. I had to add some water as well. One quart had to be a typo. I used kidney beans. I never put chick peas in my kale soup. The kale is not going to wilt in 5 mins. it takes a long time to soften up. All in all the soup came out good. I've been making this soup for years, it is a winter favorite of family and friends. Chourico wasn't available locally when I started making the soup, so I use pepperoni instead. You must realize this is a native soup many on the azorian islands are farmers ..rich in values, called in the portuguese language "Caldo verde"
The basic ingredients for caldo verde are potatoes, onions and kale (some recipes call for collard greens instead). Common flavoring ingredients are garlic and salt. Slices of chourico or linguica are usually added, you might wish to add finely cut pieces of stew beef sirloin cut or cut pieces of pork loin (reference needed) as well as olive oil. It is usually accompanied by slices of Portuguese broa bread on the side for dipping. This is only a variation of this recipe

While waiting for the kale to wilt, my potatoes burned to the bottom of the pot--ugh. Once finished, this tasted very, very good- aside from the bits of burnt stuff I had to pick out. I can only imagine how amazing it would be if I didn't screw up. I used large red potatoes (maybe that's why they burnt easily?) but they held together pretty well, and chorizo from argentina. Sorry Rach! But I am a portuguese man with from a large Portugese family from Massachusetts (New Bedford). Out of my family, I am the only one with the recipe handed down from my great, great grandmother on making authentic portugese kale soup. Your recipe is ok, but it does need some adjustments.
1. Do not cut the kale small and course, break it into peices with your hands otherwise your kale will just turn you soup dark green and pastey and mushy.
2) Do not take the casing off of the chourico, otherwise it will just break apart while cooking, Also, you must add Lingucia too.
3.) No Garbanzo beans. Red and white kidney beans only.

I tried this soup yesterday and being vegetarian I omitted chourico but rest everything same. Soup turned out very bitter and kale was hard even the shortest pieces. We've been hit with the flu so I used this recipe as a base but tossed in a chicken leg with the chorizo, added vitamin rich veggies: bok choy, yellow bell pepper, cauliflower, broccoli, zucchini and I tossed in a whole thai chili from my garden to spice it up, remove the chili before serving.

I've made countless batches of soup in my life and this is one of the best I've ever made. This soup is so flavorful in such a short period of time! Spicy sausage, creamy kidney beans, toothsome potatoes and hearty kale, who'd have thunk? I added some cayenne pepper and leftover ham and sprinkled each serving with parmesan cheese. I have made this soup the traditional way my mother and grandmother have made it for generations but I must say Rachael's lighter and quicker soup is now my go to. I substitute the kale for collard greens and the chick peas for small white beans or navy beans. My mother now asks for rach's version all the time. It has become the new family tradition. This recipe is really very good and fast. I cannot find chourico or any of its close variants around my town, so I substitute either smoked sausage or kielbasa and it is still great! I bet when it is made with the real stuff it is even better!

First time I made this, I mistakenly used Mexican chorizo instead of Spanish chorizo. Soup was okay,(very, very spicy) but I wasn't bowled over. This soup is absolutely out of this world! Rachael Ray has really been on a roll lately. The chickpeas soak up all of the red pepper and seasonings from the chourico. The kale is an excellent addition. I always add or take a little something away from the recipe but you don't want to touch this one. I can't say enough about this soup. The linguica is the way to go. To make is closer to Grandma's, cut some thick slices of French bread in a bowl, put some fresh mint on top and add the soup to make sopas. Azorean style is more hearty. Larger chunks of potato and kale (stalks are edible). An Azorean staple where the rich volcanic soil produces excellent kale. I can't imagine a week without it.
