Ingredients

Meatballs:
- 1 lb lean ground beef
- 1 lb ground pork
- 1 lb chorizo
- 2 large eggs (beaten)
- 1 cup fresh cilantro
- 2 med carrots
- 1 lg fresh jalapeno
- 3 cups cooked white rice
- 1 1/2 tsp salt
- 1 tsp black pepper
- 2 tsp ground cumin
Soup:
- 12 cups chicken broth
- 1 (28 ounce) can whole tomatoes
- 1 lg or 2 med russet potatoes (1 1/2" slices cut on a bias)
- 2 med carrots (1 1/2" slices cut on a bias)
- 2 lg or 3 med zucchini (1 1/2" slices cut on a bias)
- 2 lg or 3 med summer squash (1 1/2" slices cut on a bias)
- 1 lg jalapeno (finely diced)
- 1 lg onion cut lengthwise into 8ths
- 6 stalks of celery (1 1/2" slices cut on a bias)
- 1 cup fresh cilantro (rough chop)
- 2 1/2 tsp Mexican oregano
- 1 tsp ground cumin
- 2 tsp beef soup base
- 1 1/2 tsp salt
- 1 tsp black pepper
Directions

Meatballs:
1) Place jalapeno, carrots, cilantro, and garlic into food processor and proccess to med fine chop.
2) Mix ground beef, ground pork and chorizo in large bowl by hand with the 2 eggs, salt, pepper, cumin and cooked rice.
3) Form meatballs and refrigerate until needed.
Soup:
1) Add chicken stock to large stock pot.
2) Bring to a slow boil at medium high heat.
3) Add soup base, cilantro, oregano, cumin, salt, and pepper and stir.
4) Add carrots and stir and return to a low boil.
5) Cover and cook for 5 minutes.
6) Add celery, potatoes, onion, and jalapeno.
7) Return to boil, cover and cook for 5 minutes.
8) Add tomatoes and reduce heat to simmer.
9) Add meatballs slowly and return to a simmer.
10) Cover and cook for 10 to 15 minutes, stirring occasionally.
11) Add zucchini and yellow squash
12) Stir, cover, then cook for an additional 10 minutes stirring once or twice.
13) Albondigas is done when squash is tender but not falling apart.
